Peppermint Mocha Kiss
A peppermint Hershey's kiss atop a soft, decadent chocolate espresso cookie is what your peppermint mocha cookie dreams are made of. Just like your favorite Christmas coffee, but in cookie form!
- 1 cup butter unsalted, room temperature
- 1 cup sugar
- ½ cup brown sugar
- 2 eggs room temperature
- 1 teaspoon vanilla
- 2 ½ cups flour
- ¾ cup cocoa powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 2 tablespoon espresso powder
- 1 bag Hershey's peppermint kisses
Make the Dough
Cream together butter and sugars until fluffy and light in color.
Add egg and vanilla and stir until combined.
Sift together the flour, cocoa powder, baking soda, salt, and espresso powder.
Add the flour mixture to the butter mixture and stir until just combined.
Bake the Cookies
Roll the dough into 1-inch balls and place 3 inches apart on a cookie sheet.
Bake for 10-12 minutes until the cookies are set.
Remove from oven and immediately place a Hershey's peppermint kiss in the middle of the cookie.
