Peppermint Mocha Cookies

A peppermint Hershey's kiss atop a soft, decadent chocolate espresso cookie is what your peppermint mocha cookie dreams are made of. Just like your favorite Christmas coffee, but in cookie form!

These peppermint mocha cookies are a brand new recipe, and they have been a HUGE hit so far. The chocolate espresso cookies are super rich and flavorful, and then the peppermint kiss adds a pop of brightness and contrasting flavor!

They're also super simple- just put a few ingredients together, pop them in the oven, then put a kiss on top and voila! Deliciousness is done 🙂


Key Ingredients

Hershey's Peppermint Kisses

These are the star of the show with these peppermint mocha cookies. It provides a pop of color, and an awesome peppermint flavor that pairs so well with the chocolate mocha cookies.

If you want to, you can switch these out for other Hershey's kiss flavors, but I'd highly recommend trying the peppermint ones. They're delicious!

Cocoa Powder

The cocoa powder is what brings the yummy chocolatey flavor. You can use either regular cocoa powder or dark cocoa powder for these. Personally, I'm a fan of the dark cocoa powder, but do whatever you like best!

Espresso Powder

This is what brings the yummy espresso flavor to these cookies, and brings up the flavor of the chocolate.

You can leave out the espresso powder if you want to- the cookies will still be delicious just with the chocolate! However, I'd highly recommend keeping it in if you like coffee, because the chocolate/espresso and espresso/peppermint combos are super super yummy!


Instructions

Prepare

  1. Preheat the oven to 350.

Make the Dough

  1. Cream together butter and sugars until fluffy and light in color.
    • Make sure your butter is at room temperature. If it's not, pop it in the microwave on 8 second bursts, rotating the butter between bursts. After 3-4 times, it should be at room temperature.
  2. Add egg and vanilla and stir until combined.
    • To get the egg to room temperature quickly, you can put it in a bowl of warm water for just a few minutes.
  3. Sift together the flour, cocoa powder, baking soda, salt, and espresso powder.
  4. Add the flour mixture to the butter mixture and stir until just combined.

Bake the Cookies

  1. Roll the dough into 1-inch balls and place 3 inches apart on a cookie sheet.
  2. Bake for 10-12 minutes until the cookies are set.
  3. Remove from oven and immediately place a Hershey's peppermint kiss in the middle of the cookie.

Enjoy!

  1. Cool for about an hour, then enjoy!

You can make these up to 4 days ahead of time and store in an airtight container at room temperature.

Can I make these cookies without the espresso powder?

You sure can! If you're not into the coffee flavor, you can remove the espresso powder and I promise, they'll still be SUPER delicious. You don't have to add anything in place, just take out the espresso powder and they'll turn out just as good.

When should I make peppermint mocha cookies?

These will taste and look super festive over the holidays, but will be wonderfully delicious at any time of year!
